The cannellini beans come from a typically Tuscan cultivation, have a thin and elongated shape and are glossy white.
They are rich in glucodrines, a substance that can reduce blood sugar. Another substance contained in cannellini beans is lecithin, which contributes to the rapid emulsion of fats, in this way it will be avoided that these accumulate in the bood. They are also rich in proteins, carbohydrates, mineral salts, such as phosphorus, calcium, zinc and iron and B vitamins.
The recipes with cannellini beans are many and versatile: much of these credit goes to the consistency and delicate taste of this legume, which lends itself to an infinite number of preparations.
Before cooking they should be soaked in lukewarm water for at least 12 hours, after which they should be cooked in a pot for about 2 hours on low heat.
