It is slightly coarser than thermotreated rice cream. It is a product very useful in many recipes. This product undergoes a tosting process which modify its starch content. The effect is called pregelatinisation. This kind of flour is mainly used to make rice pasta and couscous, because thermotreated flour binds better with water improving dough consistency. Another wide use is sprinkling of dough and fresh pasta. This drier flour avoid dough sticking to other surface and losing its consistency.
