Chickpea flour is an excellent alternative to wheat flour and has the advantage of being gluten-free. Obtained by grinding the dried seeds of the chickpea, it is used as a basic ingredient in many typical recipes of Italian regional cuisines. This flour undergoes a pre-cooking process that transforms the starch content by gelatinising it. The result is a product that is particularly suitable for pasta making, as the flour 'binds' much better with the water, favouring the consistency of the dough.
