Very common in the Middle East, red lentils, also known as "Egyptian lentils", are widely used in Italian cuisine.
They are an excellent alternative to meat, because they are rich in plant proteins that can be completely assimilated by the body and are easily digestible. In addition they bring carbohydrates, good quantities of fibers that regulate the intestin, minerals, especially iron useful for those suffering for a slight anemia, phosphorus, potassium and vitamins of group B. Lentils are considered among the legumes containing greater antioxidant properties. Together with the high content of isoflavones they represent an excellent ally in the prevention of same forms of cancer. Moreover, thanks to their balanced composition of carbohydrates, fibers and proteins, they help to keep blood glucose under control.
Red lentils also have many "culinary" advantages: they cook quickly, usually do not require soaking and are very versatile, lending themselves to be used for the preparation of numerous dishes such as soups, pureed soups and croquettes.
