Sorghum flour is a excellent food for a gluten-free diet; it is rich in fibers and with a low glycemic index.

Its aroma is rather neutral, with a sometimes sweetish taste, and is therefore ideal in recipes where flour should not overwhelm the delicate aromas of the basic ingredients. Moreover, it is well suited for its neutrality, to sweet and savory preparations such as cakes, crepes, pancakes and piadinas, or to thick sauces.
