Unmistakable to the aspect: rosy skin with rust-brown steaks. Like other varieties of beans, borlotti, also known as "dwarf beans", are native to South America and widespread especially in northern Italy.
Borlotti beans are an excellent source of plant protein, molybdenum, a good source of folate and vitamin B1, as well as mineral salts such as phosphorus, iron, magnesium, manganese and potassium. These legumes are also a rich souce of dietary fiber that promotes the activity and well-being of the instestine. Borlotti are also indicated in cases of diabetes, because they contribute to lowering bad cholesterol, triglycerides and blood sugar.
They are widely used in cooking, as a side dish for tasty salads, as an ingredient to prepare soaps, pies and meatballs.
Before cooking, they should be soaked for at least 12 hours in water, after which they should be cooked for about 2 hours.
