It is the coarsest kind of rice flour, being a semolina its grain size is coarser than classic than classic rice flour. This product undergoes a toasting process which modifies its starch content. The effect is called pregelatinisation. Thermotreated rice semolina is widely uses for sprinkling of dough and fresh pasta. This drier flour avoid dough sticking to other surface and losing its consistency.
