This flour undergoes a toasting process that transforms the starch content by gelatinising it.
The result is a product that is particularly suitable for pasta-making (for rice pasta, rice couscous, ...) as the thermo-treated flour ‘binds’ much better with the water, favouring the consistency of the dough.
Moreover, thermo-treated rice flours are excellent for dusting doughs and fresh pasta due to their lower moisture content, preventing the dough from ‘sticking’ to other surfaces and losing its consistency.
